Ample intensity of green fruitiness, with notes of fresh herbs, with hints of peach, fig tree and tomato.. On the palate presents a distinct bitterness and medium pungency, with a long lasting aftertaste of green leaves.
The Picual olive is a native variety from Jaén, a province located in the central part of Andalusia, on South Spain.
The olive tree of this variety is characterized by being very vigorous, of early production and high productivity, having short branches, being very resistant to frost, sensitive to drought and for not tolerating well limestone soils.
The Picual olive is medium ripe, with high good-fats content and good extractability. It is noteworthy that it has a very thin skin and a pulp of medium/low consistency, which represents an added difficulty in obtaining high quality oils. Its intrinsic composition is especially balanced with a high content of oleic acid, monounsaturated fatty acid of high nutritional interest, low content of linoleic acid, medium palmitic acid content, and high content of tocopherols (vitamin E) so the amount of total polyphenols, natural antioxidants of the oil, is very high, which provides specific sensory characteristics in addition to the great antioxidant value, with high resistance to oxidation and consequently to rancidity, being then able to exceed two years on its date of preferential consumption under appropriate conservation conditions.
Albea Blanca´s Organic Extra Virgin Olive Oil this year is produced in the wonderful area of Puerta de Segura, in the Natural Reserve of Sierra de Cazorla, Segura and Las Villas, at north-west of Jaén, one of the largest areas of olive oil production in the world: around 45% of all Spanish production and 20% of world's production, so for this reason the province is also known as World Capital of Olive Oil.
An orographic labyrinth of valleys, limestone quarries, cuts, mountains and high plateaus, with a great hydrologic importance, because of the huge quantity of rivers and streams that flow from it; and wealth of fauna, hunting and landscape.
Olives are harvested in green, using modern and quick equipment, and are carefully transported to the mill, in small quantities, to maintain their freshness and healthy conditions.
Pristine and sophisticated state-of-the-art machinery is used in the oil extraction process, to safeguard aromas and to balance bitterness and pungency.
To longer preserve their freshness, aroma, flavor and their natural and healthy nutrients, oils are stored in the cellar in stainless steel tanks, at a constant temperature, protected from light in an inert atmosphere.
The oils are filtered, to remove impurities, highlighting the beautiful colors of each olive variety.
